Vegan choc oat cookies
3C Oats (I like to use rolled)
1/2C Liquid coconut oil
1/3C Cacao or cocoa powder
1C Coconut sugar
1/2C Nut milk (choose your favourite!)
1/2tsp Vanilla extract
Pinch of salt
1/4C Shredded or desiccated coconut
2Tbs Chia seeds
Combine everything except the oats in a medium saucepan, heat on medium (no higher) until it comes to a rolling boil, keep boiling for 3-4 minutes stirring constantly then remove from heat and add oats, stir to combine. Roll mixture into balls and place on baking paper, flatten with a fork and place in the fridge for at least 1 hour to set.
I like to top mine with a blob of raspberry jam and a sprinkle of crushed macadamias for some excitement!
